The rest of you can have your sunny side ups and poacheds and whatever looks pretty on a brunch plate, but us Asians and century #eggs are in a long-term relationship. These guys are so maligned, second only to durian - whoever started that rumor that they are brined in horse urine? They're only #preserved for months in a mixture of clay, ash, salt, quicklime and rice hulls. We eat it with rojak, congee, ngoh hiang (five spice fritters), as a cold #appetizer. Fab-erge, I say! And no, they don't come from #black chickens, which we also eat (those have black organs, plumage, legs, nails, bones and meat). There's your dairy bit o'education.
